one of our former canadian astronauts has leo's recipe too . . . i had given it to a Prof i knew (he loved it when i brought it to work) . . . he was cleaning out his pockets at this meeting where R. Bodner was (her first name escapes me ... aging process does that!) . . . came across the recipe, raved about it, she wanted it . .. end of story . . . :o)

it's an easy recipe . . . tho microwaves vary (ours is a 700 watt one) so it might take some playing around with times . . . here it is:

1 cup white sugar
1/2 cup corn syrup
mix thoroughly so all sugar incorporated into the syrup

microwave at high - 3 minutes

stir until smooth
add one cup salted blanched peanuts
stir in well

microwave at high - 3 minutes 20 seconds

stir - bringing the boiling mixture down to a working level

then add 1 teaspoon of butter
1/4 teaspoon of the pure mexican vanilla ** OR ** 1 teaspoon regular vanilla
stir in well

micowave at high, 1 minute

stir . . . then add 1 teaspoon baking soda (spread lightly over top of mixture)
slowly stir the baking soda into the mixture, consistency will change into afluffy one - but make sure all the mixture has baking soda in it ...

spread on greased cookie sheet (desired thickness)

cool for atleast 15 minutes ...

pop off cookie sheet, and break into pieces (i use rubber gloves to break the pieces, the sugar can cut your hands otherwise) . . . share with a friend.

and when i started blogging, i never in a million years thought i would be giving our a recipe ... go figure, eh!!!
